Pumpkin Perfection

Yesterday I was so busy in the kitchen!  I posted my Butternut Squash Chili recipe but I didn’t post the other two recipes I tried.  First up, Alycia’s Spiced Pumpkin Oat Bars

This recipe was so easy to make and they turned out delicious!!  I can’t keep my hands off them!! 

I also made Nicole’s Pumpkin Spice Granola.  I have been using Kashi Go Lean Crisp to top my Chobani yogurt but I wanted to take a stab at making some granola.

I followed the recipe as posted by Nicole but I had some trouble flipping the granola in the oven so I think some parts got a little burned.  Overall, it turned out pretty good.  The munchkins enjoyed some on their Chobani yogurt with lunch today and I’ve been eating it straight out of the bowl. 

I’m looking forward to experimenting with more granola recipes because I think it will be much more fun than just buying cereal to mix in to my yogurt. 

I’m making good progress on my 2011 goals – I only have 1 more recipe to make this month to satisfy my 4 recipes per month goal! 

Plans for the rest of the night include watching football (GO RAVENS!!) and playing with kids in hopes they burn off some of this energy before bed!

  3. You were on a pumpkin/squash kick, huh? 🙂 All looks very yummy. I need to figure out what I’m going to make this week to start my 1 new recipe a week goal.

  4. I hope it was still good! Did you use parchment paper? I find it easier to flip when I use it. Or maybe try flipping it earlier. Also you can always take some off to cool earlier than the others because the sides of the pan always finish first. Sorry for the paragraph! haha have a great day!
